We are dedicated to the production of goat cheese since 1987 in our cheese factory located in Deleitosa. Our products fall within the Protected Designation of Origin “Queso Ibores”.
We have been working in the cheese production sector for more tan 30 years, which has allowed us to reach such important goals as the reception in 2010 of Extrema Selección Product award granted by the Junta de Extremadura to the best goat cheese with Denomination of Origin Ibores Cheese .
At Quesería Almonte, we are proud of our surroundings, of the local livestock families and of the area, which provide us with raw goat milk from the Serrana, Verata and Retinta breeds, from grazing herds. These herds located in the region of the Ibores, Villuercas and Jara are fed by the Geopark, a natural landscape of peaks and valleys of broken relief with high biodiversity, nestled between the basins of the Tajo and Guadiana.
This area, made up of holm oak pastures and abrupt mountain ranges, shelters transhumant livestock cabins, is able to withstand the harsh conditions of grazing.
Using raw goat milk (and not pasteurized) allows us to count on the large number of unique and beneficial properties of milk that would otherwise be lost during the transformation process. In addition, it gives our cheeses their original flavor.
We work with local farmers, where we make sure that in the milk selection process exhaustive analyzes are carried out. This allows us to observe the hygiene, quality and organoleptic characteristics of it.
We currently have a modern machinery and technology where we adapt to modern times, but always without losing the essence in the production of natural and traditional products.
All this results in the production of a natural and high quality cheese, endorsed by Extrema Selección Product award granted by the Junta de Extremadura.
